The alchemy of nature: Pure Fields' journey from forest to feast
Driven by a passion for gastronomy and a deep respect for nature, Lily Luo, founder of Pure Fields, has dedicated over a decade to innovating and globally promoting wild mushrooms, bringing the finest delicacies of Yunnan to the world. In 2013, she founded Pure Fields, the result of years of exploration in food and brand innovation.
Originally from Yunnan, Luo began her career in Shanghai in 2001 after graduating from university, working for multinational companies, including the renowned French brand Etam, where she gained valuable experience in global markets. In 2013, she embarked on a new journey, launching a premium gourmet brand that seamlessly combines her profound understanding of international culinary aesthetics with her passion for Yunnan's finest natural ingredients.
In 2017, Luo was inducted as an official member of the prestigious Association des Disciples d'Escoffier International, one of the world's most respected French culinary institutions. Through this platform, she worked tirelessly to introduce the exceptional flavors of Yunnan's wild mushrooms to top chefs around the world, helping to elevate their recognition and appreciation in the international fine dining scene.

A gastronomic showcase: Where China meets the French "art de vivre"
Nestled in the stunning landscapes of Shangri-La in Yunnan's northwestern highlands, the region's rich biodiversity, abundant rainfall and pristine woodlands provide the ideal environment for wild mushrooms to thrive. Much like France's Périgord truffles and Burgundy's black diamonds, Shangri-La's unique terroir nurtures mushrooms with unmatched aroma, texture and depth.
As a result, Yunnan is home to 40 percent of the world's wild mushroom species and accounts for over 30 percent of global wild mushroom production. For decades, these prized fungi — known for their deep umami and rich terroir — have been primarily exported as raw ingredients to Europe, Japan and South Korea.
At the "Savoir-Faire en Lumière" event, Pure Fields presented a bespoke tasting menu that fused the mystique of Yunnan's forests with the sophistication of French haute gastronomie. Curated by renowned French chefs, the menu featured over 10 diverse wild mushroom and truffle products from Pure Fields, showcasing nearly 20 unique creations. The array of dishes included amuse-bouches, tarts, refined aperitifs and exquisite desserts, all specially crafted for this exceptional occasion. Ten wild mushroom-infused sauces were paired with sliced baguette, creating a harmonious balance between French artisanal bread and Yunnan's flavors.

Pure Fields' vision for food innovation and global expansion
Pure Fields is transforming the experience of wild mushrooms, elevating them from raw, seasonal delicacies to contemporary gourmet products. With a mission to turn high-end, seasonal ingredients into trendy, fast-moving culinary creations, Pure Fields offers a diverse range of innovative products.
These include 10 varieties of sauces blending Chinese and Western flavors, three flavors of gourmet biscuits, and seasonal festival delicacies like wild mushroom-infused zongzi (sticky rice dumplings) and mooncakes—fusing China's rich culinary heritage with a modern twist. Pure Fields has also represented Yunnan at prestigious events, including providing official gifts for COP15 and the 8th China-South Asia Expo.
Today, Pure Fields leads the industrialization of Yunnan's wild mushrooms with a network of processing facilities, including the Chuxiong Porcini Mushroom Factory, Shangri-La Matsutake Factory and Kunming Dry Products Factory. As Pure Fields expands globally, it aims to establish strategic partnerships with international distributors, renowned chefs, luxury hotels and global chefs' associations, bringing the flavors of Yunnan to consumers worldwide.
"Our mission is to connect Yunnan's exceptional natural ingredients with the world's finest culinary traditions," said Luo, founder of Pure Fields and member of the Association des Disciples d'Escoffier International. "We transform the world's four most renowned mushrooms — matsutake, truffle, porcini and morel — into trendy, fast-moving gourmet creations, including both French and Chinese-style sauces, biscuits and more, seamlessly integrating them into our daily lives."
This initiative has received support from the Yunnan Commercial Representative Office in Paris, which helps Yunnan-based companies expand globally. Xue Li, director of the office, said, "We are thrilled to support Pure Fields, a dynamic Chinese SME, in their expansion into France. We look forward to sharing Yunnan's unique flavors with the French people, offering them a taste of the region's rich cultural heritage while strengthening Sino-French cultural exchange and cooperation."
